Whip up a batch of cracking pancakes with fresh, local ingredients from Cheerbrook... 

We flippin' love pancakes! With Shrove Tuesday just around the corner (25th February) we thought we'd share our chefs signature pancake recipe with you all & a few inspired toppings & fillings so you can have a cracking pancake day! 

Pancakes are humble things with just a handful of everyday ingredients, to bring the best out in this simple pleasure its essential to use the best ingredients. Fresh, free-range eggs add a golden glow to your pancakes, with a more natural diet these eggs are rich in nutrients. Our free-range eggs are delivered fresh from IF Lloyds of Huxley, just a few miles from Cheerbrook. For extra egg-citement choose our coloured shelled eggs. Pair with locally milled flour from Walk Mill in Chester & Wells Staffordshire milk for simply delicious pancakes. 

Create a pick your own topping station on your kitchen table, sweet & savoury! Choose creamy Tiresford Cheshire Yogurt, with a dollop of Darlingtons Raspberry Jam & a drizzle of Buckley's Cheshire Honey. Or for a savoury twist Heler's Blackstone Vintage Cheddar & Cheerbrook Roast Ham. 

All on our chef's signature pancakes: 

Makes 12 thin pancakes

Ingredients: 
100g Plain Flour 
2 Eggs 
300ml Milk 
1tbsp Sunflower Oil 

Get cracking: 
Whizz together all of the ingredients in a food processor, blender or whisk in a large mixing bowl until well combined. 
Pop the batter in the fridge & leave it to rest for 30 min whilst you prepare your fillings & heat the oven on low. 
Heat a frying pan over a medium heat, wipe with oiled kitchen paper. 
Pour in a ladle of batter into the pan & cook for 1 min each size, flip if your brave enough! 
Once cooked flip onto a plate & keep warm in the oven & keep cooking.

For dessert, a warming apple & cinnamon crumble from our bakery, with Clotton Hall Custard. You can pick up a copy of our charity recipe book (For the Love of Food) in our farm shop, with all profits donated to Nantwich District Nurses.

Across our farm shop, butchery, deli & café we work with over 40 local suppliers, to bring you the best local food the region has to offer. With locally made fudge, hand pressed cider & freshly baked bread; fill your basket with delicious local food & drink, here at Cheerbrook. Bidlea Dairy of Holmes Chapel, supply fresh milk to our farm shop & café. The Brown family have been raising the Bidlea girls for three generations on their farm in Holmes Chapel; the herd’s bloodline can be traced back 100 years! With over 900 Holstein-Friesian cows, current farmers Adam & Becky have created the Bidlea brand, taking milk & cream into local farm shops, delis & cafés. Most recently Bidlea have ventured into ice cream production, in their farm based dairy. Grazing on luscious Cheshire grass, the herd spend the majority of the year outside, producing milk rich in protein & butter fat. Happy cows make the best milk! Taking pride in their husbandry, the Brown family's happy herd produce full flavoured, nutritious milk. A relatively new addition to Cheerbrook, Bidlea now supply all of our farm shop & café milk, as well as their rich double cream, used by our bakers in our fresh cream cakes, egg custard tarts & quiches. We’re proud to support local farmers, just like Bidlea, in their diversification!
