Recipe – Bubble & Squeak Hash

Brilliant for veggie Christmas guests but equally as good for a weeknight tea when you have leftovers from a roast.

Serves 2 generously.

  • Good knob butter
  • 1 small onion – chopped
  • 1lb mashed potato
  • Leftover cooked veg – sprouts, cabbage, carrots, parsnips
  • Salt and Pepper

Melt the butter in a large frying pan. Fry the chopped onion gently until soft. Add the mash and veg. Fry for 15-20 mins until lightly crisp on the outside.

Press the mixture into the pan to flatten and help crisping – flip over to crisp the other side.

Serve with a poached egg.
